Bhindi (Okra) Bhaji

Ingredients

  • 1 tablespoon Mama Dor’s Bombay Potatoes Spice Blend

  • 200g okra, sliced lengthways

  • 2 medium onions, peeled and sliced

  • 1 tbs extra virgin olive oil

Method

Stir fry the okra and onions on a high heat with the oil, turning regularly.

Once the stickiness of the okra has gone, add the spice blend and stir well.

Lower the heat, cover and leave for 15 minutes to infuse.
