Lamb ‘Kleftico’

Ingredients

  • 2 tablespoons Mama Dor’s Karahi Lamb Spice Blend

  • 1 Lamb Shoulder

  • 2 tablespoons extra virgin olive oil

Method

Pre-heat oven to 140 degrees.

In a large baking tray, rub the Mama Dor’s Spice Blend all over the lamb shoulder, alongside the oil. Use your hands and make sure you’ve covered the whole thing.

Cover with foil, and leave to sit at room temperature for about 30-45 minutes.

Place in the pre-heated oven and cook for 4-5 hours, checking and basting every hour.
