Sweetcorn and red onion fritters

Ingredients

  • 100g of Mama Dor’s Onion Bhaji Blend

  • 300g of tinned sweetcorn, drained

  • 1 medium red onion, chopped finely

  • 2 eggs

Method

Throw the sweetcorn & onions into a mixing bowl.

Add eggs and stir well.

Add the bhaji mix and stir again.

Leave the mixture to sit for about 20 minutes.

Heat a non-stick frying pan with a tsp of extra virgin olive oil.

When hot, dollop a heaped tablespoon of the mixture, and flatten gently.

Leave for two mins.

Flip and cook on the other side for two minutes, until golden brown.
